1-1/2 lbs Red potatoes
2 Tbs Olive oil
4 Tbs Minced garlic
1-1/2 Tbs Ground coriander
Salt and pepper

Pre-heat oven to 450° F.
Cut potatoes into 3/4-1-1/2 inch wide wedges.
Combine potatoes, garlic, oil and coriander in 8 inch baking dish. Season with salt and pepper and mix.
Cover the dish and roast until potatoes are tender and crusty, stirring occasionally, about 45 minutes.
Quantity of coriander still experimental. Adjust to taste at next use.
